This is your fun place to see what's new
in Chris' Studio and Kitchen. "Eggless Egg Salad"
In a small bowl add the following ingredients:
mince 1 stalk celery,
1 lb. package med/soft tofu-not silken(well drained)
1 Tb yellow prepared mustard
1 Tb Guldens brown mustard
1 Tb. dry dill weed
1 Tb. parsley flakes
Add 2TB plain non-fat yogurt.
Dash each: paprika, garlic salt, salt & pepper
Gently mash ingredients together till crumbly and moist. Dish out onto lettuce leaves, garnish with fresh tomato slices. Keep refrigerated in covered bowl. The tofu may weep so pour off the excess moisture. This is also great on lightly toasted whole grain or dourdough bread with a topping of alfalfa sprouts, and bacos. Enjoy!
